fun with flour (+ food coloring) – key lime

key lime cupcakeYou may have noticed that the breads section of our recipe reliquary is a bit lacking. That’s not because we eschew carbs, quite to the contrary. We just haven’t got a lot of experience (read: confidence) when it comes to baking. Recently we were sent* a bag of King Arthur Self Rising Flour and there, on the side of the bag, is printed a recipe for biscuits. Be still our made-from-scratch loving hearts! Three ingredients? We could do that. And we did, to flaky buttery perfection. Biscuits! Real ones! How about throwing some sharp cheddar cheese into the mix? Um, yep. Suddenly we’ve caught the baking bug. Yesterday’s playful post got us thinking about key lime pie. Would it work as a cake? According to this recipe by Buttersweet Bakery in Bon Appétit, the flavors would translate quite nicely. We decided to brave it.

ingredients
  • 1 cup all purpose flour
  • ¾ cup self-rising flour (we used King Arthur brand)
  • ½ cup (1 stick) unsalted butter, room temperature
  • 1¼ cup sugar
  • 2 large eggs
  • 2½ tablespoons fresh lime juice
  • 1 tablespoon finely grated lime peel
  • ¼ teaspoon neon-green food coloring
  • ¾ cup buttermilk
  • ~
  • 1 8-ounce package cream cheese, room temperature
  • 1½ cups powdered sugar
  • ½ cup (1 stick) unsalted butter, room temperature
  • 1 tablespoon finely grated lime peel
  • ½ teaspoon vanilla extract
instructions
  1. cupcakes - Preheat oven to 350°F.
  2. Line standard muffin pan with 12 paper liners.
  3. Whisk both flours in medium bowl.
  4. Beat butter in large bowl until smooth.
  5. Add sugar; beat to blend.
  6. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled).
  7. Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions.
  8. Spoon scant ⅓ cup batter into each liner.
  9. Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes.
  10. Remove from pan; cool.
  11. frosting - Beat all ingredients in medium bowl until smooth.
  12. Spread over cupcakes.

Our icing skills are seriously suspect but were the goods edible? Incredibly! We’ll happily keep practicing – and sampling – our trial runs.
