We were fans of Chef Paul Qui long before his Top Chef fame, thanks to a late night rendezvous at Liberty Bar where we first tried his fried Brussels sprouts salad. A sriracha spiked revelation. And as former Austinites, it has been especially fun to watch him garner (well deserved) accolades from all corners of the world, seas included. He was recently named Young Chef of the Year 2013 at this year’s San Pellegrino Cooking Cup in Venice, Italy. For a self-professed landlubber, he seemed to take to the competition like a duck to water, thrilling the judges with a chawanmushi dish.
Our congrats, Chef. We raise a glass of Pellegrino and can’t wait to stop into Qui the next time we’re back in Texas.
